Desi Khand (also known as Khaand or Khandsari) is a traditional Indian unrefined sugar made from sugarcane juice. It is a natural, granular sweetener that lies somewhere between jaggery (gur) and refined white sugar in terms of processing. 

Unlike white sugar, which undergoes bleaching and crystallization using chemicals like sulfur, Desi Khand is made using natural methods, retaining many of the nutrients from the sugarcane.
